The castle itself, situated in an old riverbed of the Oder, at the southern edge of the former village of Jelcz which now forms part of Jelcz-Laskowice, is mentioned in documents from the end of the 14th century. The building was rebuilt at the beginning of the 15th century. After a fire in 1623 it was rebuilt and there were even intentions to fortify it. This, however, ended with ambitious plans. The last rebuilding, in the Neoclassical style, took place in 1797. Over the centuries the castle changed owners: for the longest time (from the beginning of the 16th century) it belonged to the Wrocław merchant family Sauerman (later Saur). The transfer of the family's seat to Laskowice at the beginning of the 19th century caused the Jelcz castle to fall slowly into ruin, especially once a brewery was set up in it.
